muffins mania

my MIL makes really yummy muffins and i wanted to try my hand at making some too!

trawled the internet for easy (okay more like idiot proof) chocolate muffins and this website's recipe was the simplest...decided to use up walnuts from my last botched attempt of flourless chocolate walnut cookies and so it became chocolate walnut muffins.

a close up of the muffin before going into the oven...at this point of time the batter was really watery and looked more like nutella and i was worried...

the finished product! decided to throw in more walnuts for the subsequent batches to make it more crunchy.

verdict: i like anything with chocolate so this was not too bad! but it was more cake than muffin; think i might have to add in the baking powder instead of using self-raising flour! J liked the crust and the nuts so that's good too. wonder what my MIL will say heh...

shall attempt something more complex my next baking foray....godiva crumb-topped banana chocolate chunk muffins!
